Till the invention of the modern equipment and technologies of freezing and keeping the product frozen ice cream was considered to be delicacy that was served only on special occasions in rich families. At that time the process of production of ice cream was very complicated.
The ice was got with the help of special equipment from lakes and pounds in winter and was kept in cellars covered with straw. In such way it was protected from the influence of the surrounding.
Ice cream was hand-made. To make ice cream a big vat was used and there were huge pieces of ice and salt near it. They were used to decrease the temperature of other products. The salty water was made colder with the help of ice and salt made the ice melt. And in the end the mass got the temperature when the water freezes. It is interesting to know that if the vat was put into the water with ice and without salt the result was worse than the one got with the usage of salt.
In the beginning of 19th century the greatest invention was made in the sphere of milk masses production. People started to use ether in compressor systems. And in several years the first machine that shook and froze the ice cream was invented. It was the small apparatus that was alike the jug with three vanes. It was covered with ice and snow mixed with mineral salt.
