Ice cream is the favourite dessert of children and adults from all parts of the world.Ice cream reminds us about our childhood when it was the favourite food for breakfast, lunch and dinner.The iced coffee with ice cream topping is famous all over the world and is considered to be delicate dish of many gourmets.

And of course everybody keeps the traditional image of holidays that consists of the ice cream and champagne.

Ingredients of ice cream

The modern kinds of ice cream that are produced as the industry contain such ingredients:

- Milk with the fat content not less than 10%

- Milk dry remainder that makes 9-12% of the ice cream. Casein and lactose are one of them.

- Sugar makes 12-16% of ice cream. Usually it is the combination of sucrose and glucose syrop.

- Stabilizers and emulsions that make only 0.5%.

- Water that is 55% - 64%. And it vaporizes from other products of ice cream.

All these ingredients with air that gets to the mass in the process of shaking make the ice cream. Usually less expensive ice cream contains products of less quality. For example, the natural vanilla can be substituted by vanillin. In the result, air makes more than a half of the product. And ice cream of high quality usually has a little amount of air inside it. The best concentration of air should not be more than 3-15 % of all mass of the ice cream. With the help of air it is possible to save products and money in such way, but in the result people won't like the ice cream.
